Light spice enchiladas

So I know the recipe title sounds funny but these are yummy. I modified these from a cookbook I have.


Light Spice Chicken Enchiladas 
4 T butter
5 T flour
2 cans chicken broth 
1/2 t onion powder 
1/4 t garlic powder
1/3 c sour cream
4 oz. cream cheese 
3 1/3 c shredded cooked chicken 
2 cups Mex. cheese mix
1 stalk celery, chopped
1 tomato, chopped 
10 flour tortillas

Preheat oven to 350 and spray a 9x13 with cooking spray. Melt butter in skillet until bubbly, add flour at stir to combine. Whisk until mixture until flour is light golden brown. Slowly add broth and then spices. Bring sauce to a simmer and stir until thickened. Then take off heat and add sour cream. In a bowl melt cream cheese until easily mixed. Add 1/2 cup sauce, celery, tomato, chicken and 1 1/2 c cheese. Heat tortias in microwave for 30 sec. Put 1 cup sauce on the bottom of the pan and spread. Place 1/3 cup filling on one side of the tortias, then roll up starting where the filling is and roll tightly! Place the tortias snugly in the pan, top with remaining sauce and cheese. Bake for 20-25 min until cheese is melted and bubbling.
